10 min Refuel – Noodle Soup
This super healthy one- pot noodle soup is one of my all time favourite recipes for when I need a super quick and nourishing meal. Often, once the kids are in bed or I just feel too tired to cook much else – this is my answer!
You can use any veggies you have at home for this. It’s a really versatile recipe!
Noodle Soup – Recipe for 2:
Buckwheat noodle soup with veggies
Ingredients:
Buckwheat noodles 150g
1 Courgettes
1 Carrot
2 heads of pok choi
2 stems of spring onions
2 cloves of garlic
Ginger
Chilli
Tamari Sauce
2 tsp Organic Stock
We are going to cook the noodles seperately so start by adding noodles to a pan of boiling water and reduce to meduim heat. Cook for 4-5 minutes. Drain and refresh with cold water. Set aside.
Then bring 1 lt of water to boil and add 2 tsp of organic stock and simmer. Add chopped up pieces of ginger, garlic and spring onions. Chop your carrots into chunks and add to the broth, followed by your courgette chunks and pok choi. This only needs to simmer for a few minutes as we want the veggies nice and crunchy.
Now pour in 4 tbsp of tamari sauce and season with fresh chilli and a sprinkle of lemon juice.
Lovely served with fresh coriander, but not to worry if you have not got any at home.
Now turn on the telly, put your feet up and enjoy! x
