This season’s favourite salad for your perfect BBQ is an Asian style spiralised courgette, sweet potato and carrot bowl. It’s super easy to throw together, full of good stuff and the flavours are so perfectly balanced!

Asian style spiralised courgette, sweet potato and carrot bowl

Serves 4

2-3 sweet potatoes, spiralised or julienned
4 carrots, spiralised or julienned
1.5 courgettes, spiralised or julienned
2 cloves of garlic, minced
2 cm piece of grated ginger
1 tbsp honey or maple syrup
2 tbsp tamari
1 tbsp sesame oil
Sesame seeds to garnish
Spring onions to garnish
Lime wedges

Heat a frying pan to a medium heat and add tamari, honey, ginger and garlic and stir for a couple of minutes until it thickens up a little.
Take off the heat to mix in the sesame oil and then add your spiralised veggies.
Mix well, cook on a low to medium heat for 5 minutes.

Serve with spring onions and sesame seeds sprinkled over your dish and drizzle over a bit of lime juice to taste.
