Blueberry and Oat Snack Bars

Now, now, now…another super versatile recipe. I have these at breakfast time with a little almond milk or you can make these fab Blueberry and Oat Snack Bars into a delicious and healthy dessert if you like.

They’re really easy to make too – give them a go!

Blueberry and Oat Snack Bars


180g oats

130g blueberries

2 tbsp melted coconut oil

2 tbsp desiccated coconut

1 grated apple

2 tsp ground cinnamon

2 – 3 tbsp maple syrup

2 medium eggs, whisked

2 tbsp peanut butter or almond butter (unsweetened)



Mix all of the ingredients together and pour the mixture into a lined baking dish. Put in the preheated oven at 180°C, gas mark 4 for 30 minutes.

Leave to cool, cut into chunks & enjoy!


For our Supper Clubs we will serve this with half a baked pear each and some dairy free yoghurt and it makes a delicious desert!

For the baked pears:

Wash and cut pears in half. Scoop out a little hole in the middle of each half and fill with a drizzle of honey and date syrup and sprinkle over bits of walnut. Bake in the oven for about half and hour alongside your pudding.
