Chia Seed Breakfast Pot

I’ve tried lots of different variations of this but keep going back to this simple, non- fuzzy, quick and inexpensive recipe. It means I don’t have to have lots of fancy ingredients at home, apart from the chia seeds of course. I totally understand that you might find them a little fancy, especially if you have not tried them before, but do give them a go and this breakfast recipe is so simple – worth a try!

Chia seeds are so tiny but really versatile. Mix them into your smoothies, your porridge or your muesli and the fibre, protein and Omega-3 fatty acids will help fuel your body for a great day ahead.

Chia Seed Breakfast Pot

Ingredients: for 1 pot

4 tbsp chia seeds

1 tsp maple syrup

150 ml almond milk

1 teaspoon, mixed nuts and or seeds

1 tbsp oats

a handful of berries or any other fruit to top

Instructions:

Mix chia seeds, almond milk and maple syrup in a small bowl or glass jar.

Let it set in fridge overnight (or at least for 4 hours).

In the morning, remove from fridge and make sure your pudding looks thick and the chia seeds have gelled.

Top with fresh fruit and chopped nuts, oats…

Take it away to work or enjoy straight away. It’s that easy!
