Easy and healthy banana oat and spinach pancakes – Happy Pancake Day!
Happy Pancake Day! This easy and healthy banana oat and spinach pancake recipe is a really fun way of making Pancake Day super special this year! Originally I made this without banana in the mixture but I found that the kids just wanted to top their pancake stacks with streams of honey, so I incoorporated the banana into the mixture and it works a real treat! And for the spinach, not to worry you can’t really taste much of it but the super green colour makes for such a fun eating experience!
Packed with the good stuff these easy and healthy banana oat and spinach pancakes are so easy to make and they look so impressive stacked up high as well.
Banana Oat and Spinach Pancake – Recipe
Ingredients for 3 small stacks:
5 tbsp oats
2 tbsp milk (I use almond milk, unsweetened)
1/2 a banana
a handful of spinach
a few pumps of frying oil or a bit of coconut oil for frying
berries, fresh fruit, maple syrup or honey to top
Instructions: Mix all the ingredients in a blender. Heat some oil in the frying pan and once hot pour in your pancake mixture. Cook for a couple of minutes on a medium heat on each side or until cooked all the way through.
