No nut, no bake energy snack bars
Hello, thank you for stopping by! I’m so pleased I’ve finally nailed my no nut, no bake energy snack bars. As always, I have been on a quest to make healthy cooking family- friendly. I’m not a friend of cutting out entire food groups, but I rather like looking at how I can make our food more nutrient dense. In a tasty and simple way and for all of us to enjoy.
The girls have gone back to school so pack lunch is on the top of my agenda. But it’s so hard as most other children have chocolate bars, crisps and hairdos in their lunch boxes, so my three girls want something sweet too. I totally get it! But there is no way that I want to give them fully processed sugar bombs each and every day. So these no nut, no bake energy snack bars is just what I needed. The original recipe came from @mylovelylittlelunchbox and I love so many of her recipes. Go check her out! But I needed something nut free as most schools require this and I used much less raw cacao as the girls found it a little too bitter.
So the result is just perfect for us! Oh, I’ve added hemp seeds to give them the extra protein kick too. Happy days!
Recipe for No nut, no bake energy snack bars
Ingredients:
170g oats
130g desiccated coconut
25g raw cacao
25g hemp seeds (and some extra for coating)
5 dates, pitted
100ml coconut oil, melted
60ml maple syrup
1 tsp vanilla bean extract (optional)
(Note: if you feel like less cacao then substitute with hemp seeds)
Method:
Weigh out all of your ingredients and place them all into your food processor, blitz until finely chopped.
Check your mixture. If it is too dry, add 1-2 tbsp of water but keep the motor running and mix until it all comes together nicely.
Prepare a baking tray or square dish and line it with parchment paper.
Scoop out your no nut, no bake energy snack bar mixture and press into your dish firmly.
Sprinkle with some more hemp seeds and press those in a little.
Pop into your fridge and let set for about 1 hours.
Once ready, cut into your desired sized bars and keep in the fridge until you’re ready to roll them up in paper for your children pack lunch. Enjoy!

These look great! My kids would love them. They love energy bars. I especially like that they’re no nut. My son is allergic to peanuts. It’s always nice to see recipes without them. 🙂
