Nutritious Asparagus and Egg Bowl

This Asparagus and Egg Bowl is another super yummy, super quick and super nutritious meal. I make sure that I buy really good quality eggs as you can taste the difference, especially when you only have 2 or 3 ingredients in a dish.

Asparagus and Egg Bowl

Ingredients: for 1 lunch portion

2 cup, Spinach – Raw

2 Tsp, Lemon Juice

1 dash, Salt, table

1 tsp coconut oil

300 grams, Asparagus

2 large (50g), ” Egg

Instructions:

Heat the coconut oil in a frying pan and when moderately hot add the asparagus. Keep tossing until the asparagus softens, for about 5 minutes.

Drizzle over the lemon juice, salt and pepper and layer the spinach on top.

Break your eggs over the spinach and put a lid on the pan.

The eggs will cook, the spinach will also soften.

Once the eggs are done, season to taste and enjoy!
