One-Pot Spinach and Chickpeas
I am currently working on One-Pot meals that taste fantastic but only use one pan or pot to create the whole meal. I am such a believer that we need things to be easy in life, especially as we are all juggling so many things at the same time. Unless you are a sort of domestic goddess, getting in from work to children that need attention and a household that needs looking after is a challenge on it’s own – so I totally agree that there is hardly any time to make a cauliflower pizza base from scratch! And although it’s great to spend more time on some amazing and delicious recipes, the Monday to Friday versions need to be simple, yummy, healthy & satisfying! This One-Pot Spinach and Chickpeas tastes divine!

One-Pot Quick Spinach & Chickpeas
Recipe for 2:
1 can of chickpeas
3 large handfuls of spinach
Salt and pepper
Heat a little oil in a frying pan and add the garlic. Drain your chickpeas, add to the pan and give them a good toss around. Add your spinach, pour over as much lemon juice as you want and season with salt and pepper. It’s lovely served with chilli flakes too.
