Pearl barley, broccoli, fine beans & courgette salad bowl
This delicious Pearl Barley, Broccoli, Fine Beans & Courgette salad bowl can be served hot or cold and is really yummy with or without Halloumi. The green dressing is full of flavour and it also looks great too so it’s always a crowd pleaser. A fab side to a summer’s BBQ with the Halloumi!
Pearl Barley, Broccoli, Fine Beans & Courgette Salad Bowl
Preheat oven to 180.
Rinse pearl barley, cover with 4 x water in pan and boil for about 20 minutes. Then drain.
Wash, cut and season beans and broccoli and steam for about 6 minutes.
In a blender:
Add washed spinach, spring onion, rapeseed oil, mint, garlic and seasoning, coconut milk and ginger and a handful of the steamed beans and blend into a rough paste.
Mix this with the cooked pearl barley, broccoli and green beans and serve in a big bowl.
Chop halloumi into 1cm squares, toss in a very little oil and sprinkle black pepper over it. Heat a frying pan to high heat, throw in the hallumi and brown off for a few minutes, continuously turning the hallumi over to prevent from burning.
Garnish with mint leaves and lime wedges.
Top with halloumi.
Scatter over nuts.
