Sauerkraut and Eggs

Sauerkraut and Eggs is a fabulous combination and so good for you! Sauerkraut is a fermented food and very popular in Austria. And although I’ve grown up with it, I never knew that it is an excellent way to rebuild healthy gut bacteria! It’s an excellent source to make our guts more healthy! Traditionally it is served with dumplings, potatoes and sausages, which I don’t really eat now, so when my friend Claire told me about a sauerkraut- harissa- egg combination I was very interested. And it’s fabulous! The salty kraut balances with the spicy harissa and I think ‘yum’ at every bite!

Sauerkraut and Eggs

Ingredients: for 1

1 slice of rye bread, toasted,

a teaspoon of harissa

a teaspoon of rapeseed oil

2 eggs

 

Instructions:

Toast your rye bread.

Heat up the oil in a pan and fry your two eggs. Season.

Spread the harissa over your toasted bread (no butter needed), layer up with the sauerkraut and top with eggs.
