Spicy Quinoa Bowl – a healthy ‘leftovers’ lunch

Spicy Quinoa Bowl from leftovers

My weekday lunches are usually a mix of last nights leftovers with some more veg. I had quinoa left over from last nights supper and a few roasted veggies so I added a handful of salad leaves. To give it all some great tasting flavour, I have used tamari sauce with olive oil and lemon juice for my dressing. A bit of seasoning and you have a Spicy Quinoa Bowl – soooo tasty!
